This is one of our more complicated recipes. Not that it’s hard, but takes a bit more effort than just add water. You may have heard of Callie’s Hot Little Biscuit. We don’t sell their ready-made products at Buy Way of Charleston but we do have several of their products including their famous Buttermilk Biscuit Mix. I’m not much of a baker but I was on a mission to try making these to see if they are as good as the ones I get on King Street. Mine was definitely not as good BUT… they were delicious. The instructions aren’t hard, it’s just more work than I really want to do for a weeknight dinner. Warning, I forgot to mute my TV in the background on part of this video so… oops, sorry!

I paired this one with Hush Puppies (and if you watch that video you will see when I boiled this soup over) and it was the perfect side.

Potato Soup

I’ve made several things now and this one by far is my favorite. I love potato soup! And to be completely honest, I make homemade potato soup and this one is better. I’ll never make homemade again.

I’ve made several things now and this one by far is my favorite. I love potato soup! And to be completely honest, I make homemade potato soup and this one is better. I’ll never make homemade again.

For this one, I did add extra potatoes to give a really chunky potato texture and highly recommend that if you have some older potatoes that you need to use up then this recipe is perfect.

The other thing I added on top was cheddar cheese and crispy bacon. I didn’t have any green onion or chives but that would be perfect for this soup too. You don’t even need to have any cream or anything, just water, and extra potatoes if you have them. You don’t even need that, just water is fine. I hope you enjoy it!

How to Make Hush Puppies

Confession: I could eat my weight in Hush Puppies. They are perfect little fried doughs of bread. Ever since I was a little kid, I could make a whole meal on hush puppies. I may have grown up in West By God Virginia but every year we went to the beach and we’d go eat seafood where I’d sustain on hush puppies for an entire week.

As much as I love them I’ve never made them at home before. They’ve always felt like a luxury I get at a seafood restaurant but now that I’ve done them at home, this might become a staple in our house. Even Allen, who’s not a foodie like me (I know, how does that even happen), was like, “These are really good. You need to make these again.” That definitely means they are good.

Fried Green Tomatoes

I love Fried Green Tomatoes and every time I see them on a menu I order them because I’ve never made them at home. Well, I finally got up the courage to make them at home and I’m happy I did. Personally, I find frying time-consuming and it makes a huge mess. The mess is the part I hate. But, I didn’t have that with these tomatoes.

Green tomatoes are basically regular tomatoes that aren’t ripe yet. They are firm so that’s why you can fry them but can’t fry regular red tomatoes. Green tomatoes are hard to find at the grocery store so I’ll warn you that you may not be able to just pick them up any old time. When I do see them it’s usually only in the spring so I grabbed some when I saw them in the local produce section at the Harris Teeter down the street.

Pimento Cheese Grits

Grits seem intimidating to make for some reason. But it’s sorta like cooking rice. Add water, add grits, put on simmer, and 20 minutes later you have grits. In this video, Ronii shows us how she makes Pimento Cheese Grits. Basically, it’s two southern staples mashed together. Well, there’s no mashing involved, just a whole lotta yum.

How to Make Jambalaya

At first thought, you might think of Jambalaya as a Louisiana and New Orleans dish but in the Lowcountry, this one is a staple for us as well. This spicy one-pot dish is perfect for a busy weeknight.

While it’s not hard to make Jambalaya from scratch, it’s more time-consuming and expensive once you get all the spices. And for me, ain’t nobody got time for that. I used smoked sausage but you can use any protein. I just happened to have smoked sausage in the fridge. I did brown my sausage before adding it into the Jambalaya but you don’t have to do that. This can truly be a one-pot dinner. We loved this one and my only regret was that I didn’t make cornbread to go with it.

How to Make Cherry Cobbler

While I love cherries, sometimes cherry pie filling can get a little sweet for me, so I had a bag of fresh cranberries in the freezer and I dumped half the bag in with the pie filling. Let me just say, this tart loving girl thoroughly enjoyed this Cherry & Cranberry Cobbler. I highly recommend that cranberry addition!

I LOVE cherries so when I saw that started carrying Gullah Gourmet’s Cherry Pickin’ Cobbler I was super excited. Where I grew up in West Virginia we had a cherry tree in our front yard. But I don’t remember us ever eating a cherry off that tree as a kid. And as I mentioned, I love cherries. Well, one spring when my husband and I were visiting my parents my Dad came in from the yard and was like the cherries are ready. And I made both my parents and my husband drop everything and go pick cherries. See, the reason we never eat a cherry off that tree is that the birds have some kind of radar that knows the precise moment that cherries are ripe and they steal all of them (greedy little suckers). So, the 4 of us got grocery bags and picked as many cherries as each of us could fit into our bags. While it was nice to finally beat the birds to the cherries, the best part was spending that afternoon with my family doing nothing but talking and picking cherries.

What did we do with all those cherries? Well… obviously, I ate my weight in them. But we had enough for a pie. And my Godmother must love me very much because she pitted what felt like a million cherries to make a pie. This is why you never see cherry pies with fresh cherries, it’s a real pain and time suck to pit all those cherries. Hence, cherry pie filling exists.

That was a long story just to say, I made Cherry Cobbler. While I love cherries, sometimes cherry pie filling can get a little sweet for me, so I had a bag of fresh cranberries in the freezer and I dumped half the bag in with the pie filling. These are drop biscuit and at first glance, they look too wet. But they did rise and Danni said they didn’t spread too much and she was worried about that. Regardless, it’s nice to know that we can have warm, fresh biscuits any night of the week.

We sent Danni home to make Geechie Peachie Cobbler. And guess what? She didn’t even invite us over to try it! But we’re not mad, she shared it with her family after a nice dinner. So, it’s a win for everyone.

The Peach Cobbler was super easy to make as you can see from Danni’s video. She did note that she bumped up her oven temperature and let it bake a little extra to GBD (Golden Brown & Delicious) on top. She served it warm with whipped cream on top. But you could also have ice cream with it. I mean… anything goes with ice cream, am I right?

Gumbo Party: How to make Gullah Gullah Gumbo

I didn’t really make this for a party unless you consider of the two of us in my house a party. Somedays it is, I guess. I made this Gumbo on a Sunday supper with the intention of having leftovers for another easy weeknight dinner. With just two of us in my house that worked out great. But really, it’s so tasty you probably won’t have leftovers.

We are not really shrimp fans (I know! Super weird since we live near the coast) so I used smoked sausage and it was awesome. I definitely think you could add any protein you want to this gumbo, like shrimp, sausage, crawfish or chicken. But it’s a flexible “recipe” so you do you boo and add whatever protein you want.

You seriously, can’t beat how easy this one is! Take a look at me making this gumbo.

How to Make Banana Nut Bread

I have a confession to make. I hate bananas. But my partner loves them and he loves banana bread. And everyone in the world is making banana bread in quarantine so I had FOMO (fear of missing out). So I decided to make this quick & easy banana nut bread and give bananas one more chance. Guess what? I still hate bananas. But that has absolutely nothing to do with this mix and is all me. Everyone in my house loved it!

So I decided to make this quick & easy banana nut bread and give bananas one more chance. Guess what? I still hate bananas. But that has absolutely nothing to do with this mix and is all me. Everyone in my house loved it!

And I can not tell you how easy it was. I got my fancy stand mixer out but didn’t need too. I just figured I have it so why not use it. Really all it was was mixy, mixy, pour in the pan, bake, and done.

I did try it. I cut a wedge and put butter on mine, well, just because. Butter makes everything better, right? Even bananas. But honestly, you could put ice cream, whipped cream, powder sugar, strawberry jam, or anything you want on top.

The key is to not overmix it otherwise it will get tough. So, just mix until it comes together. Other than that it’s definitely flexible and forgiving. My family definitely recommends it (I say you need to like bananas).
